A 13 year old Speyside malt from Craigellachie by itself is sweet thing. We've used it to braise and char pineapple, green apples thyme, brown sugar and cinnamon. Then we added it to fermented scotch bonnets, chipotles, more whisky, orange and good quality ACV. It's sweet, smoky, spicy and the whisky gives it an acidic finish. The goal was to make a BBQ pineapple hot sauce with whisky - nae bother.
When we make our sauces we keep waste to a minimum, taking our time to make each batch as tasty as the last. No waste, no haste, all taste!
